Geschiedenis
Grégory Nicole is een bekende Franse chef, niet alleen in Amsterdam, maar ook ver daarbuiten. Ooit begonnen in zijn woonplaats Le Touquet als maître bij hotel Le Picardy. Daarna werkt Grégory enkele jaren als souschef bij zowel ‘Au Coin des Bon Enfants‘ in Maastricht als bij ‘Le garage’ in Amsterdam voordat hij zijn eigen zaak opent in 2006. Bijna negen jaar lang runde Grégory Nicole met veel succes en plezier de Franse bistro en het restaurant ‘The French Café’ in het quartier latin van Amsterdam: de Pijp.
Maar het bloed kruipt waar het niet gaan kan. Afkomstig van het Franse platteland en opgegroeid in een horecafamilie verlangt Grégory naar een zaak dichter bij zijn roots. Buiten, dichter leven op de natuur, verder weg van de stad. Dat creëert tijd. Meer tijd voor producten, meer tijd voor koken en meer tijd voor de gasten.

About 50% of my meat was fat, when I spoke to the waiter he went to the kitchen, came back and told me the weight was exactly what I ordered....... After putting some pressure they got me another peace of meat. I did not leave the restaurant hungry, but unsatisfied about the service.
