I used to love Daalder (the Jordaan place before the Michelin start) and before the pandemic, I went very regularly. For lunch, business, I took clients. The food was always outstanding, and there was passion perceivable in the team. I was the biggest advocate always suggesting and I sincerely felt proud when they were awarded a star, so well-deserved. Until tonight when I took my partner there for a dinner. I am a teacher at the Hotelschool The Hague and paying for a fine dining experience is special. We were so excited. When I made the reservation, the prices advertised were 95€ for 6 courses and 125€ for 8 courses. More than in the past, but completely understandable With the pandemic and a star. When we sat down, I mentioned that we „booked“ the 6 courses. We didn’t get a menu, which felt unusual but okay. Fast forward to the food - the dishes were good, but for us lacked depth and flavor and complexity. Some dishes were dominated by one Ingredient (ie ham or jasmine). Nothing was bad, but I missed the wow effect. The exception for me was the dessert- that was fantastic!!! Now the moment of real surprise came with the bill. The 6 courses were suddenly 135€. I asked our waitress about it and said that when I booked 3.5 weeks ago, the 6 courses were 95€? She said that since then, they changed to 2hr (6courses for 135) and 3hr (8 courses for 175). She also claimed that while it was still 6 courses, we also got the amuses? Now, despite us not being customers that can afford fine dining every month, we have done it a lot and I have never been to a star restaurant without amuses. So to claim that being the reason for 40€ price change is not convincing. In the end, I could have asked before, and the next time I will. But all in all, this so special evening left us with food that I would give 7/10, a much bigger bill then expected and a reaction of the staff that felt accusing and as if we couldn’t afford it :( what a change to the small, intimate, amazing value for money place this used to be…

A beautiful restaurant with a hipster design, this artistic environment is welcoming and friendly. But the real reason you should come is the heavenly food. The Michelin star restaurant certainly does not disappoint with each plate providing a gastronomic dream. The presentation is masterful but my favorite part is the palate explosion of delicious texture and taste. A must for any Amsterdam visit.

We absolutely loved the food, however the total experience felt not really worth the money (€ 300 p.p.). The seating was crowded, the music loud, the service was very dependent on which waiter, and the 22:00 closing time was not managed well (not by us, but also not by the staff) so it meant rushing the 3 last courses in 15 minutes. For us, it was a fine experience with a-ma-zing food but I probably wouldn’t recommend others because it lacked a higher level of hospitality.

Excellent 5 course lunch, with an interesting wine pairing. The dishes were very good, which is expected in a restaurant of this standing, but still! Good equilibrium between flavours, great balance, lots of surprises. Structure, taste, texture, and well managed ingredients: all was very well done. To say, the only comment I had was about the hardness of the ice cream. The wine pairing was good, well suited to the dishes and with interesting, not-so-conventional propositions. Especially commendable that Daalder proposes a 'designated driver' option: half the volume, for half the cost. Great to try and discover one glass per dish without suffering from after effects. The restaurant looks great, modern, with an appealing decor and ambiance. Unobstrusive, electronic music plays, which might not be what is expected by those who'd favour the customary feutré ambiance of your casual, off-the-mill michelin. I'll visit again, next time I'm around. In the meantime, you should do as well.

I did't really have good experience in this restaurant. The food was nice but the service was very slow. The waitresses are friendly. So, I started eating at 18:50 and be advised to get 6 courses as the restaurant needs to be closed at 20:00 but at the end I paid more for 6 courses. I didn't realise it but when I checked at home, I was just shocked. Sorry It's not worth of money.

A great place to start our trip in Amsterdam. Everything was perfect at this michelin star restaurant- from the friendly service to the amazing dishes in the tasting menu we had. The photos speak for themselves. The only thing to improve is about the wine. We ordered a bottle of wine but they almost never came to refill our glasses unless we asked for it.

Had an amazing experience here, especially since it is very difficult for me to find a fine dining experience with the dietary restrictions I suffer because of ibs. The chefs were amazingly accommodating, adjusting the beautiful dishes to be both lactose and gluten free! The menu was refreshing and exciting, with flavours that were complex and packed a punch, but also with some dishes that deserved their spot with modest and simple flavours. The mocktails were fun and made me feel special as my partner and brother had a wine arrangement. They love most of the pairings, though there was some critical feedback about the citrussy white wine pairing with the fatty "perfect egg" dish not being the most optimal choice, but that was soon forgotten with the more interesting duets that came later. The only thing I might have found difficult was the loudness of the music. It was hard to keep a conversation going, and especially difficult to understand the servers’ explanation of the food or wines. It, at times, felt like we were dining in a nightclub which was only amplified by the closed curtains cutting us off from the outside view and the colourful lights hanging above our heads. But then again, it was also an experience unlike any other we've ever had before which made it truly unique. I would not have wanted to miss out on this opportunity, it was a joy to visit, a truly unique experience to eat here as well. The staff was fun and enthusiastic about the food. I was even able to order another dessert, which they then surprised me with a dessert they hadn't introduced on the menu yet. I can see how they earned a star with the concept of this restaurant, the marriage of flavours, impeccable service and the artsy vibe really make it well deserved.
