Before we had dinner we had high expectations(Because of the whole building, their good quality food pictures on their website..). But this didn’t match with reality at all. I know, this is just my personal opinion. But I lived so long in Japan... and New york, L.A, Now I live in Amsterdam. I understand what they want to try. But I think they have only concept and they said to me β€œit is fusion.”.. All the dishes were really not good. You can’t hide behind the word β€˜fusion’ because to be able to β€˜fuse’ multiple cooking styles well you need to be expert in those styles. Unfortunately, I didn’t feel that was the case at all. Example.. not so high quality ingredients.. Maki(roll) making skill.. My point is β€˜They can make whatever they want, chef freedom, but they do charge almost expert quality prices in Amsterdam so we can expect more as well then’. I deeply hope they improve because I think they have so much potential and they have really good attitude to listen another opinion (when I asked them something.. they were very kind to explain/answer) Plus, they have the best Sake selection that I have seen in Amsterdam.

The owner is extremely arrogant towards reviewing the restaurant. He might have missed a class or two on dealing with guest reviews. 1st, we were 15 mins late and still you were preparing the fishes when we arrived. Beening in many highend restaurants I FIND EXTREMELY UNPROFESSIONAL the clothing of the kitchen staff, this is my opinion and thats why is called a review so u can tell others how you experienced this place. 2nd my friend wich you were hitting on told us that she found extremely awkward you mentioning many times that you are single, if a lady says that she experienced that, then is not professional of your part to try to implement that is her fault. 3rd if I find that is extremely uncomfortable you having to eat al the dishes among us, THIS IS MY OPINION ON MY EXPERIENCE, as a chef and owner you just have to respect that. If we found the price is not worth it to the experienced, THATS ALSO OUR OPINION, just accept and respect that. 4th the pairing that we asked if we could share, wich is not a favour, because we are paying and we were sharinga glass, if you didnt keep track of the dishes and the matching sake, wich our friends were having other drinks with same pairing during the same dish, not showing a menu of drinks puts the guest in a awkward situation not knowing what the options are, basically saying that the pairing is the only way. 4th in anyway I have assault you as a person with my review, im reviewing your restaurants, its very ordinary to mislead my review towards my personal values. Next time you try to reopen a restaurant, consult a restaurant expert before, you might get some insights which clearly you dont have.

This is the best sushi place in Amsterdam in terms of quality, no doubt. However it's not fine dining in terms of dΓ©cor, and that's why I love it. The first thing you read on the website is "FINE TRADITIONS MADE CASUAL". If you have wrong expectations that's on you, just don't leave a review instead of a bad one because you can't read. And the kombuchas and sakes they serve were really great, some of the best I had. I'm really happy Kit is bringing this level of quality to Amsterdam.

We had omakase and it was really good! In total we had 20 dishes and almost all of them were nigiri sushi. Quite expensive but high quality fish and food. Would definitely recommend!

As Amsterdam was coming out of lockdown, we had a craving for a real dining experience - something special to help celebrate the opening of restaurants again. Fortunately we were able to make a reservation at UNDERCOVER- with the omakase menu! Kit started serving sushi from university dorm and is a bit of an urban legend, promising a dining experience which benefited the relaxed atmosphere of this history but coupled with exquisitely fresh ingredients. The food was fantastic with good pacing between each bite. Going from hand to mouth like proper omakase should and great care with each piece of sushi. Was it the best sushi I’ve had in Europe? No, but it was pretty damn close. Fairly reasonable pricing and great dining experience. Not exactly the most traditional sushi but it also doesn’t claim to be. Come with an open mind and enjoy the wonderfully fresh sushi, in a modern environment and a contemporary take.

Yesterday me and my group of friends went to here expecting a cool Japanese cuisine experience, but it was a horrible experience. They only showed us a menu of the pairing drink course, we were not able to see any menu of drinks howsoever. As for the chef was dressed very unprofessional, it was a first that the chef was also eating among us during the service time, wich was very uncomfortable, also because he was constantly hitting on our friend. All the different pairing of drinks were not served with the matching food, we started our course upstairs and for the last 2 dishes we had to rush to move to a small table infront of the entrance while my girlfriend was still eating. If you asked the chef about the food, he uses fxck and other slang words to describe the course, wich is very unnecessary, we tought that we were getting different dishes but it was all 7 nigiris, a miso soup, a reddish starter and a cheese slice. For 55 euro plus 35 of the pairing we could have eaten somewhere else much better with a much better service. I really dont recommend.

Legit omakase with the tastiest and freshest tuna you can find jn Amsterdam. Go for the full experience with 15-20+ courses. My favourites were the fatty tuna (toro) dishes. With cool staff and young hip chef.
