Het is een verfijnde en zeer rijke keuken, waarin aroma’s als saffraan, rozenwater, kardemom en foelie een belangrijke rol spelen. Er zijn veel overeenkomsten met de keukens uit de omliggende landen als Iran of Pakistan en daarom vind je daar gerechten als kebab, biryani en pulao. Een bekende curry uit deze regio is Korma, een mild gerecht met noten en (gedroogd) fruit.
